ONE Fermentary & Taproom is a brewpub offering our own craft beers in concert with collaboration beers, guest beers, fine wines (sourced by Libation Project) and custom-designed spirits (crafted in collaboration with Tattersall Distilling). We also have our own in-house food and snack menu to satisfy those cravings.
Why do we call ourselves a fermentary? Because we have invested in a collection of unique fermenters in which to brew our beer. Fermentation is also the process involved in making wine, kombucha and coffee, all of which we serve, and is present in many of the foods we offer, like breads, meats, cheeses, olives and pickles. It seemed only logical.
